Eurogerm Deactivated Sour
Deactivated sour (or devitalized sour) is an all-natural sour in a ready to use free flowing powder form. It can be added in the bowl at 3% (or higher dosage) to add fermented flavor in various types of breads without addition of preferment or undergoing long bulk fermentation. Depending on the substrate (e.g. wheat, barley, rye, durum) the deactivated sour can impart unique fermented flavor profile.
