Parfen Sarasin (Buckwheat) – Toasted Buckwheat Flour (Item#11205 Eurogerm) is an excellent ingredient to impart grilled roasted and hint of hazelnut flavors in all types of breads. It can be added in the bowl at 3% (or higher) dosage to yield the desired flavor/aroma and crumb/crust color profile.
